Description

A simple yet delightful summer dish featuring grilled zucchini topped with creamy goat cheese, fresh basil, and a drizzle of honey.


Ingredients

Scale
  • 5 medium zucchinis
  • Salt, to taste
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Salt + pepper, to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Prepare the zucchini by washing and slicing them lengthwise into 1/4-inch thick strips.
  3. Season the zucchini slices in a large bowl with olive oil, salt, and pepper.
  4. Grill the seasoned zucchini slices for about 3-4 minutes on each side until grill marks appear and they soften slightly.
  5. Assemble the grilled zucchini on a serving platter and sprinkle crumbled goat cheese on top.
  6. Add the chopped basil over the zucchini and cheese.
  7. Drizzle with honey and serve warm.

Notes

Best enjoyed warm but can also be served at room temperature. Perfect as a side dish for grilled meats or as a topping on salads.
