- 1 (8-oz.) block feta cheese
- 1 (12-16 oz.) bag frozen spinach, thawed
- 1 cup plain whole-milk Greek yogurt
- 1/2 cup mayonnaise
- 2 garlic cloves, grated
- A generous pinch crushed red pepper flakes
- 1 cup sliced pepperoncini peppers, roughly chopped
- 1 1/2 cups grated fresh mozzarella cheese, divided
- Non-stick cooking spray (or oil for greasing pan)
- For serving: pita chips, crostini, seeded crackers, raw veggies
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a medium-sized baking dish with non-stick cooking spray or olive oil.
- Mix the thawed spinach, Greek yogurt, mayonnaise, garlic, and crushed red pepper flakes in a large mixing bowl.
- Add the crumbled feta and chopped pepperoncini, stirring gently.
- Pack the mixture into the baking dish, smoothing the top.
- Sprinkle one cup of grated mozzarella over the dip.
- Bake for about 25 minutes, until bubbly and slightly golden.
- Remove from the oven and top with remaining mozzarella, then bake for an additional 5-7 minutes until melted.
- Serve warm with your favorite dippers!
Notes
For extra flavor, drizzle olive oil over the top or sprinkle with fresh herbs before serving.
