Ingredients

  • 1 (8-oz.) block feta cheese
  • 1 (12-16 oz.) bag frozen spinach, thawed
  • 1 cup plain whole-milk Greek yogurt
  • 1/2 cup mayonnaise
  • 2 garlic cloves, grated
  • A generous pinch crushed red pepper flakes
  • 1 cup sliced pepperoncini peppers, roughly chopped
  • 1 1/2 cups grated fresh mozzarella cheese, divided
  • Non-stick cooking spray (or oil for greasing pan)
  • For serving: pita chips, crostini, seeded crackers, raw veggies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a medium-sized baking dish with non-stick cooking spray or olive oil.
  3. Mix the thawed spinach, Greek yogurt, mayonnaise, garlic, and crushed red pepper flakes in a large mixing bowl.
  4. Add the crumbled feta and chopped pepperoncini, stirring gently.
  5. Pack the mixture into the baking dish, smoothing the top.
  6. Sprinkle one cup of grated mozzarella over the dip.
  7. Bake for about 25 minutes, until bubbly and slightly golden.
  8. Remove from the oven and top with remaining mozzarella, then bake for an additional 5-7 minutes until melted.
  9. Serve warm with your favorite dippers!

Notes

For extra flavor, drizzle olive oil over the top or sprinkle with fresh herbs before serving.
