Description

A quick and flavorful dish featuring pasta, fresh spinach, crumbled feta, and garlic, perfect for weeknight dinners or meal prep.


Ingredients

  • 8 oz (220 grams) Penne
  • 1 tablespoon extra virgin olive oil
  • 3 garlic cloves, minced or sliced
  • ¼ teaspoon chili flakes, or more to taste
  • 10 oz (300 grams) spinach, washed
  • 7 oz (200 grams) block of feta
  • 1 tablespoon lemon juice, or more to taste

Instructions

  1. Boil a large pot of salted water. Add the penne and cook according to package instructions.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant and golden.
  3. Add chili flakes and allow to sizzle briefly.
  4. Toss in the spinach, cooking until wilted.
  5. Crumble in the feta and mix well.
  6. Combine the cooked pasta with the spinach mixture, adding some reserved pasta water if needed.
  7. Squeeze lemon juice over the top, mix thoroughly, and adjust seasoning as desired.

Notes

For a creamy version, add a splash of cream or cream cheese after adding the feta. You can also include proteins like chicken or shrimp for a heartier meal.
