Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger (fresh or ground)
  • Salt and pepper to taste
  • Chopped green onions (for garnish)

Instructions

  1. Prep the chicken. Place the chicken breasts in your slow cooker first. Season lightly with salt and pepper.
  2. Add the pineapple and liquids. Pour in the pineapple chunks, soy sauce, brown sugar, and ketchup.
  3. Spice it up! Sprinkle in the garlic powder and ginger, then gently stir with a wooden spoon.
  4. Set it and forget it. Cover the slow cooker, set to low for 6-8 hours (or high for 3-4 hours), and let it cook.
  5. Shred and serve. Once done, shred the chicken right in the slow cooker and mix until well-coated.
