Description
A delightful mocktail combining refreshing coconut, tangy lemon, and floral lavender for a tropical experience.
Ingredients
Scale
- 1 cup coconut milk
- 1 cup fresh lemon juice
- 1/2 cup lavender syrup
- 2 tablespoons honey or agave nectar
- 2 cups cold water
- Ice cubes (as desired)
- Lemon slices (for garnish)
- Lavender sprigs (for garnish)
Instructions
- Make the Lavender Syrup (if homemade): Bring a small pot of water to a gentle simmer. Combine 1/2 cup of sugar and 1/2 cup of water along with 2-3 tablespoons of dried culinary lavender. Stir until the sugar dissolves, and let it steep for about 15-20 minutes. Once cooled, strain to remove the lavender buds.
- Juice Those Lemons: Slice your lemons in half and juice them until you have 1 cup of liquid.
- Mix It All Together: In a pitcher, combine the freshly squeezed lemon juice, coconut milk, lavender syrup, and honey or agave nectar. Stir everything together well.
- Add Cold Water: Pour in the 2 cups of cold water and mix well, adjusting sweetness or acidity to your liking.
- Chill It Down: Refrigerate for at least 30 minutes or pour it over ice immediately.
- Serve It Up: Fill glasses with ice cubes and pour the mocktail over; garnish with lemon slices and lavender sprigs.
Notes
Experiment with adding sparkling water for fizz or muddling fresh berries for different variations.
