- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup unsalted butter, melted
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups fresh apricots, pitted and sliced
- 1 tablespoon lemon juice
- 1/4 cup sliced almonds
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×13-inch baking dish lined with parchment paper.
- Mix the flour, oats, brown sugar, granulated sugar, baking powder, and salt in a large bowl.
- Add the melted butter and stir until crumbly, reserving about 1 cup for topping.
- Prep the sliced apricots with lemon juice in another bowl.
- Assemble by pressing the crumb mixture into the baking dish.
- Add the apricots over the crumb base.
- Top with reserved crumb mixture and sliced almonds.
- Bake for 30-35 minutes until golden.
- Cool for 10-15 minutes, then slice and serve.
