Ingredients

  • 1 tablespoon Extra Virgin Olive Oil
  • 1 cup Finely Diced Onion
  • 1/2 cup Finely Diced Celery
  • 2 Garlic Cloves, Minced
  • 1/4 cup All-Purpose Flour
  • 1 quart Half-and-Half
  • 28 ounces Chicken Broth
  • 1/2 teaspoon Dried Thyme
  • 1/2 teaspoon Dried Parsley Flakes
  • 1/4 teaspoon Ground Nutmeg (optional)
  • 1 cup Carrots (Finely Shredded)
  • 1 cup Spinach Leaves (Coarsely Chopped)
  • 1 cup Chicken Breast (Cooked and Diced)
  • 16 ounces Package Ready-to-Use Gnocchi

Instructions

  1. Sauté the vegetables: Start by melting your butter and olive oil in a large pot over medium heat. Add the diced onion and celery, and sauté for about 5 minutes until they become tender and fragrant.
  2. Add garlic and flour: Stir in the minced garlic and cook for about 30 seconds until it gets aromatic. Next, sprinkle the flour over the veggies and mix well to form a paste.
  3. Pour in the liquids: Gradually whisk in the half-and-half and chicken broth, stirring until it’s silky smooth.
  4. Season it up: Add the dried thyme, parsley, and nutmeg (if using). Bring the soup to a gentle simmer for around 10 minutes.
  5. Add the veggies and chicken: Toss in the shredded carrots and chopped spinach along with the cooked, diced chicken and gnocchi. Cook for an additional 5-7 minutes or until the gnocchi float to the top.
  6. Taste and adjust: Before serving, taste the soup and adjust the seasoning with salt and pepper as needed.
  7. Serve it up: Ladle your soup into bowls and garnish with fresh parsley and parmesan if desired.

Notes

To add a spicy kick, consider adding red pepper flakes while sautéing the vegetables.
