Ingredients

  • 1/2 cup unsalted butter (softened to room temperature)
  • 1 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups unbleached flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup caramel pieces (divided)
  • 1/2 cup toffee pieces (divided)
  • Sea salt (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a baking sheet with parchment paper.
  3. Cream the butter and brown sugar together until light and fluffy.
  4. Add the egg and vanilla extract and mix until well combined.
  5. Mix the dry ingredients (flour, baking powder, baking soda, and salt) in a separate bowl.
  6. Combine the dry ingredients with the wet ingredients until just mixed.
  7. Fold in ¾ of the caramel and toffee pieces.
  8. Scoop rounded tablespoons of dough onto the baking sheet.
  9. Top with extra caramel, toffee bits, and a sprinkle of sea salt.
  10. Bake for 10-12 minutes or until edges are golden.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill the dough for 30 minutes to prevent spreading.
