Ingredients

  • 1¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • ¾ cup brown sugar
  • ½ cup oil or melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ cup brown sugar (for streusel topping)
  • ¼ cup granulated sugar
  • ½ cup flour (for streusel topping)
  • ½ tsp cinnamon
  • 4 tbsp cold butter (cubed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it with butter or non-stick spray.
  3. Mix the dry ingredients: In a large bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. Combine the wet ingredients: In another bowl, mix pumpkin puree, brown sugar, oil or melted butter, eggs, and vanilla until smooth.
  5. Merge the dry and wet mixtures, folding gently until just combined.
  6. Make the streusel topping by mixing brown sugar, granulated sugar, flour, and cinnamon, then working in cold, cubed butter until crumbly.
  7. Pour half the pumpkin batter into the prepared pan.
  8. Add half of the streusel topping over the batter.
  9. Top with the remaining batter, finishing with the last of the streusel.
  10. Bake for 55 to 65 minutes, until a toothpick inserted comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

This bread tastes even better after a day or two as the flavors meld together.
