Ingredients

  • 1 lb ground turkey
  • 2 large sweet potatoes, diced
  • 1 can diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prep your ingredients: chop your sweet potatoes and onions.
  2. Heat the olive oil in a large pot over medium heat.
  3. Sauté the chopped onion for 3-4 minutes until translucent, then add garlic and stir for another minute.
  4. Brown the ground turkey for 5-7 minutes until fully cooked.
  5. Add the sweet potatoes and cook for 3 minutes.
  6. Pour in the chicken broth and diced tomatoes, scraping up any bits stuck to the pot.
  7. Spice it up with chili powder, cumin, salt, and pepper, and let it simmer for 30 minutes.
  8. Add the corn 5 minutes before serving.
  9. Final taste check and adjust seasoning.
