- 1 lb smoked sausage (Andouille recommended)
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese (for garnish)
- 2 tbsp olive oil
Instructions
- Prep your ingredients by chopping your onion, bell pepper, and garlic.
- Sauté the sausage in olive oil over medium heat for 5-7 minutes.
- Add the chopped onion and bell pepper; cook for 3-4 minutes.
- Add the minced garlic and cook for 30 seconds.
- Incorporate the chicken broth and penne pasta, bringing to a boil.
- Reduce heat to simmer, cover, and cook for 10-12 minutes, stirring occasionally.
- Mix in the heavy cream, diced tomatoes, Cajun seasoning, paprika, salt, and pepper; let simmer for 5 minutes.
- Garnish with grated Parmesan cheese before serving.
Notes
For vegetarian version, use vegetable broth and omit sausage. Can substitute with turkey sausage for a lighter option.
