  • 1/2 cup plain breadcrumbs
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cups mashed potatoes (prepared or leftover)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Shape the mixture into a loaf and transfer it to a lined or greased loaf pan.
  4. Bake for 45-50 minutes or until the internal temperature reaches 160°F (70°C).
  5. Prepare mashed potatoes by mashing potatoes with sour cream, butter, salt, and pepper until creamy.
  6. Layer the mashed potatoes over the cooked meatloaf.
  7. Sprinkle shredded cheddar cheese on top of the mashed potatoes.
  8. Bake for an additional 15 minutes or until cheese is bubbly and golden brown.
  9. Garnish with fresh parsley if desired and let it rest for 10 minutes before slicing.

Notes

For a beautiful glaze, brush additional ketchup on top during the last 10 minutes of baking. This dish goes well with steamed veggies or a side salad.
