  • 1/2 cup gluten-free flour

  • 2 Tablespoons bourbon (Maker’s Mark recommended)
  • 1 cup chicken broth
  • 1/4 cup pecans (chopped)
  • 3 Tablespoons pure maple syrup (not pancake syrup)
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoons gluten-free reduced-sodium Tamari (or soy sauce if not GF)
  • 1/4 teaspoon dried rosemary (crushed)

Instructions

  1. Prep your chicken: Start by giving those chicken thighs a good rinse and pat them dry with paper towels. Season generously with salt and pepper.
  2. Flour it up: In a shallow dish, add the gluten-free flour. Dredge each chicken thigh in the flour, coating evenly.
  3. Heat the pan: Drizzle olive oil in a large skillet and heat over medium-high until shimmering.
  4. Sear the chicken: Place chicken thighs in the hot skillet and sear for about 5–7 minutes on each side until golden brown.
  5. Make the sauce: Remove chicken and add the bourbon, chicken broth, maple syrup, Dijon mustard, apple cider vinegar, Tamari, and crushed rosemary to the pan.
  6. Return the chicken: Nestle the chicken back into the skillet, coating it in the sauce. Bring to a simmer and cover, cooking for about 20-25 minutes.
  7. Add pecans: Five minutes before serving, stir in the chopped pecans.
  8. Serve it up: Remove chicken from skillet and let it rest for a few minutes before serving.
