  • 1 Tablespoon Dijon Mustard
  • 2 Tablespoons Fresh Thyme
  • 2 Tablespoons Honey
  • 1 Pound Fresh Figs

Instructions

  1. Prep the Chicken: Start by patting your chicken thighs dry with a paper towel. Season both sides generously with salt and pepper.
  2. Heat the Oil: In a large skillet, heat the olive oil over medium-high heat.
  3. Sear the Chicken: Add your chicken thighs, skin-side down first, and cook for about 5-7 minutes until golden brown.
  4. Garlic Time!: Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Prepare the Marinade: In a small bowl, whisk together the balsamic vinegar, Dijon mustard, thyme, and honey.
  6. Add the Marinade: Pour the balsamic mixture over the chicken and let it simmer for about 5-8 minutes.
  7. Figs In: Once the chicken is almost cooked through, add the halved figs to the pan and let everything cook together for another 5 minutes.
  8. Check for Doneness: Make sure your chicken has reached an internal temperature of 165°F (75°C).
  9. Serve it Up: Remove from heat and let the dish rest for a couple of minutes before serving.
