Description

Ingredients

  • 3 very ripe bananas, mashed (approx. 1 ½ cup)
  • 1 large egg (room temp is best)
  • 2/3 cup pumpkin puree
  • 1 ½ cups all-purpose flour
  • 5 tablespoons butter (melted and then cooled)
  • 1/3 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1 cup chocolate chips (dark chocolate preferred)
  • ½1 teaspoon pumpkin pie spice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5 inch loaf pan by greasing it well.
  3. Mash the bananas in a mixing bowl until smooth.
  4. Combine the melted butter, brown sugar, egg, pumpkin puree, and vanilla extract with the bananas.
  5. Mix the flour, baking soda, baking powder, sea salt, and pumpkin pie spice in another bowl.
  6. Combine the dry ingredients into the wet mixture gently.
  7. Add the chocolate chips and stir until evenly distributed.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 55-60 minutes or until a toothpick comes out clean.
  10. Cool in the pan for about 10 minutes, then transfer to a wire rack.
  11. Enjoy slices warm or cooled completely.

Notes

For extra flavor, consider adding nuts or dried fruits. The bread keeps well; it can be frozen for up to 3 months.
