- 15-ounce can of pumpkin puree
- 3/4 cup coconut flour
- 1/2 cup maple syrup
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
- 2 eggs
- 1 teaspoon pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1/3 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your baking dish by lining it with parchment paper or greasing it lightly.
- Mix the wet ingredients in a large bowl until fully combined and smooth.
- Incorporate the dry ingredients in a separate bowl, and gradually add them to the wet ingredients.
- Add the chocolate chips to the batter.
- Transfer the batter to the prepared baking dish.
- Bake for about 30-35 minutes or until a toothpick comes out clean.
- Cool the bars for about 10 minutes in the pan, then transfer to a wire rack.
- Cut into bars and enjoy!
