Description
A refreshing mocktail combining the tartness of blueberries with the zing of ginger, elevated by a fizzy splash of sparkling water.
Ingredients

- 2 cups water
- 3/4 cup blueberries (fresh or frozen)
- 2 Tbsp roughly chopped fresh rosemary (woody stems removed)
- 3 Tbsp finely chopped fresh ginger
- 1/4 cup maple syrup
- 1/4 cup lemon juice
- Ice cubes
- 1/4 cup blueberry syrup (plus more to taste)
- 1/2 cup sparkling water
- Few dashes of orange bitters (optional)
Instructions
- Start with the infusion: In a medium saucepan, bring 2 cups of water to a gentle boil. Once it bubbles away, throw in the blueberries, chopped ginger, and fresh rosemary. Let it simmer for about 10-15 minutes.
- Strain and sweeten: Once the mixture is fragrant, remove it from heat and strain it through a fine-mesh sieve into a bowl. Press down gently on the blueberries to extract all the liquid.
- Add the sweet and sour: In the bowl of infusion, whisk in the maple syrup and lemon juice. Taste it and adjust if needed!
- Chill it out: Let the mixture cool to room temperature, then refrigerate for about 30 minutes or pour it over ice to cool it quickly.
- Ready to sparkle: In a glass, fill it halfway with ice cubes, pour in about 1/4 cup of your cooled blueberry mixture, and top it off with sparkling water.
- Optional: Add a few dashes of orange bitters on top for that extra flavor.
- Garnish and enjoy: Garnish with a sprig of rosemary or fresh blueberries and savor your creation!
