  • 1 heaping tbsp cornstarch
  • 23 tbsp water (as needed)
  • 1 package pastry tart shells (approximately 30)
  • Whipped cream (for garnish)
  • Optional: Edible flowers and thyme for garnish

Instructions

  1. Combine the pitted sour cherries and sugar in a large pot over medium heat to release juices.
  2. Sprinkle the cornstarch over the mixture and stir until combined, cooking for 5-7 minutes until thickened.
  3. Preheat your oven to 350°F (175°C) and arrange tart shells on a baking sheet.
  4. Spoon the cherry mixture into the tart shells generously.
  5. Bake for 20-25 minutes or until shells are golden and filling is bubbling.
  6. Cool the tarts on a wire rack for 15-20 minutes before serving.
  7. Top each tart with whipped cream and optional edible flowers or thyme.
