Ingredients

  • 2 cups huckleberries
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 cup milk
  • ½ cup butter, melted
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, toss the huckleberries with a tablespoon of sugar (optional) and let them sit.
  3. Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
  4. Create a well in the center and pour in the milk, melted butter, and vanilla extract. Mix until just combined.
  5. Pour the batter into a greased 9×13 inch baking dish and spread it evenly.
  6. Spoon the huckleberries on top of the batter, do not mix.
  7. Place the dish in the oven and bake for about 35-40 minutes, or until golden brown and bubbling.
  8. Remove from the oven and let it sit for about 10 minutes before serving warm.
