Ingredients

  • 11/2 cups chopped de-seeded tomatoes
  • 1/4 cup packed fresh basil leaves (chopped, plus more for garnish)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic (pressed or very finely minced)
  • Salt and pepper
  • Balsamic reduction (Alessi brand recommended)
  • Crackers or crostini for serving

Instructions

  1. Prep the tomatoes: Wash and dice them, removing seeds to prevent soupiness.
  2. Chop the basil: Stack, roll, and slice into thin ribbons to release flavors.
  3. Mix the base: In a bowl, mix both packages of Boursin cheese until creamy.
  4. Combine the ingredients: Add tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper; fold gently.
  5. Taste test: Adjust seasoning as needed.
  6. Chill out: Cover and chill in the fridge for at least 30 minutes.
  7. Serve and garnish: Remove from fridge, garnish with basil and balsamic reduction; serve with crackers or crostini.

Notes

This dip improves in flavor if made a day in advance. Store in an airtight container and add garnishes before serving.
