- 2 (5.3 oz) packages Boursin cheese
- 1–1/2 cups chopped de-seeded tomatoes
- 1/4 cup packed fresh basil leaves (chopped, plus more for garnish)
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic (pressed or very finely minced)
- Salt and pepper
- Balsamic reduction (Alessi brand recommended)
- Crackers or crostini for serving
Instructions
- Prep the tomatoes: Wash and dice them, removing seeds to prevent soupiness.
- Chop the basil: Stack, roll, and slice into thin ribbons to release flavors.
- Mix the base: In a bowl, mix both packages of Boursin cheese until creamy.
- Combine the ingredients: Add tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper; fold gently.
- Taste test: Adjust seasoning as needed.
- Chill out: Cover and chill in the fridge for at least 30 minutes.
- Serve and garnish: Remove from fridge, garnish with basil and balsamic reduction; serve with crackers or crostini.
Notes
This dip improves in flavor if made a day in advance. Store in an airtight container and add garnishes before serving.
