- 8 oz bow tie pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1/2 cup red onion, diced
- 1 cup Italian dressing
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add the bow tie pasta and cook according to package instructions (about 8-10 minutes) until al dente.
- Drain the pasta and rinse under cold water.
- Dice the cucumber, bell pepper, and onion into bite-sized pieces and halve the cherry tomatoes.
- Combine the cooled pasta with the chopped veggies in a large bowl.
- Pour in the Italian dressing and stir gently to combine.
- Taste and season with salt and pepper as desired.
- Chill in the fridge for at least 30 minutes before serving.
- Garnish with parsley just before serving.
Notes
