Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup apple cider
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced apples (peeled and cored)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your muffin tin by greasing with cooking spray or lining with paper liners.
  3. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Combine the wet ingredients in another bowl: apple cider, vegetable oil, eggs, and vanilla.
  5. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  6. Add the diced apples to the batter and fold in.
  7. Scoop the batter into muffin cups, filling them 3/4 full.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Cool the muffins in the pan for 5 minutes before transferring to a wire rack.

Notes

Serve warm with butter and cinnamon sugar for an extra touch.
