Description

A warm and comforting treat perfect for fall, these soft, chewy oatmeal cookies are infused with pumpkin spice and topped with a delightful icing.

Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 ½ teaspoons pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • ½ teaspoon pumpkin pie spice (for icing)
  • 3 to 5 tablespoons milk or heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) while you gather your ingredients.
  2. Mix the dry ingredients: In a large bowl, whisk together the rolled oats, flour, baking powder, pumpkin pie spice, baking soda, and salt.
  3. Cream the butters and sugars: In another bowl, beat together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add eggs and vanilla: Beat in eggs one at a time, along with the vanilla extract.
  5. Combine the wet and dry ingredients: Slowly add the dry mixture to the wet mixture, stirring until just combined.
  6. Scoop and bake: Use a cookie scoop to drop rounded tablespoons of dough onto ungreased or parchment-lined baking sheets.
  7. Bake: Pop them in your preheated oven for 10-12 minutes until golden around the edges.
  8. Cool down: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  9. Make the icing: Whisk together powdered sugar, pumpkin pie spice, and enough milk/cream to reach a drizzle-able consistency.
  10. Ice those cookies: Once completely cool, drizzle the icing over the tops!

Notes

For variations, consider adding chocolate chips, dried cranberries, or using gluten-free flour.
