  • 1 box yellow cake mix
  • 1 cup grape juice
  • 1 can crushed pineapple
  • 1 cup whipped topping
  • 1 cup sweet coconut
  • Water (as required for cake mix)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking pan by greasing it with cooking spray or butter.
  3. Mix the yellow cake mix, water, and grape juice in a large mixing bowl on medium speed for about 2-3 minutes.
  4. Pour the batter into the greased pan, spreading it evenly.
  5. Bake the cake for about 25-30 minutes or until a toothpick comes out clean.
  6. Cool the cake in the pan for about 10 minutes, then remove it to cool completely on a wire rack.
  7. Poke holes evenly across the cooled cake using a fork.
  8. Prepare a mixture of reserved juice from the crushed pineapple and the pineapple itself, then pour it over the poked cake.
  9. Frost the cake with whipped topping after the juice has absorbed.
  10. Add sweet coconut on top, toasting it if desired.
