- 1 lb shrimp, peeled and deveined
- 1 lb andouille sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 2 cups okra, sliced
- 2 tbsp gumbo seasoning
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Cooked rice for serving
- Chopped green onions for garnish
Instructions
- Sauté the veggies by heating the vegetable oil in a large pot over medium heat, then add the onion, bell pepper, and celery. Cook for about 5 minutes.
- Add the garlic and let it cook for about 1 minute until fragrant.
- Brown the sausage by tossing in the sliced andouille and cooking for 3-4 minutes until browned.
- Stir in the okra and cook for another 3 minutes.
- Pour in the chicken broth, scraping the bottom to release flavors. Bring to a gentle simmer.
- Season it up by stirring in the gumbo seasoning, bay leaf, and salt and pepper. Simmer for 15-20 minutes.
- Add the shrimp and cook for about 5 minutes until pink and opaque.
- Taste and adjust seasoning as needed before serving.
- Serve the gumbo over cooked rice, garnished with green onions.
