Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) Red Gold Tomatoes
  • 2 cups macaroni
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes.
  2. Brown the beef: Push the onions and garlic to the side of the pot, add the ground beef. Use a wooden spoon to break it up as it cooks. Sauté until it’s browned and no longer pink, about 5-7 minutes.
  3. Add the tomatoes and broth: Once the beef is cooked, pour in the canned tomatoes, including their juices, and the beef broth. Stir to combine.
  4. Stir in the macaroni and paprika: Add the macaroni and paprika to the pot, stirring until fully combined. Bring the soup to a simmer.
  5. Season and simmer: Reduce heat to low and let the soup simmer for about 15-20 minutes, until the pasta is tender and the soup thickens.
  6. Serve and garnish: Ladle the soup into bowls and sprinkle with fresh parsley for added freshness.

Notes

For a vegetarian version, substitute ground beef with lentils or black beans. A splash of sour cream can enhance the soup’s flavor.
