- 1 cup (240 ml) sweet potato puree
- 6 tablespoons (85 g) brown butter
- 1/3 cup (80 ml) maple syrup
- 1 3/4 cups (220 g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Brown the butter in a medium saucepan over medium heat, stirring frequently for about 5-7 minutes until golden and nutty.
- Mix the sweet potato puree, brown butter (slightly cooled), maple syrup, eggs, and vanilla extract in a large bowl.
- Combine the flour, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Mix the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for 10 minutes before transferring to a wire rack.
