  • 1 cup (240 ml) sweet potato puree
  • 6 tablespoons (85 g) brown butter
  • 1/3 cup (80 ml) maple syrup
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Brown the butter in a medium saucepan over medium heat, stirring frequently for about 5-7 minutes until golden and nutty.
  3. Mix the sweet potato puree, brown butter (slightly cooled), maple syrup, eggs, and vanilla extract in a large bowl.
  4. Combine the flour, baking soda, cinnamon, nutmeg, and salt in another bowl.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 55-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring to a wire rack.
