Ingredients

  • 2 cups cucumber, peeled and diced
  • 1/2 cup sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon mint extract (optional)

Instructions

  1. Prepare your cucumbers by peeling and dicing them into smaller pieces.
  2. Blend the diced cucumbers, sugar, water, and lemon juice until smooth.
  3. Taste the mixture and adjust sweetness as needed.
  4. Chill the mixture in a shallow dish in the freezer for about 1 to 2 hours.
  5. Stir the mixture with a fork to break up any ice crystals after the initial chill.
  6. Freeze again for 2-3 hours, stirring every hour if possible.
  7. Serve the sorbet in chilled bowls and enjoy!
