  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese
  • 6 large flour tortillas (burrito-size)
  • 2 tbsp vegetable oil (for brushing/frying)

Instructions

  1. Cook the Beef Mixture: In a large skillet over medium heat, add your ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onion becomes translucent, about 5-7 minutes. Drain excess grease if desired.
  2. Season It Up: Sprinkle in taco seasoning, then add salsa and refried beans. Mix until combined and heated through, about 3-4 minutes.
  3. Prepare the Tortillas: Lay out tortillas and soften in the microwave for 15-20 seconds if needed.
  4. Stuff the Tortillas: Spoon the beef mixture onto each tortilla, keeping it toward the center. Top with shredded cheese.
  5. Roll ‘Em Up: Fold sides over the filling then roll tightly from the bottom. Brush with vegetable oil.
  6. Fry to Perfection: Heat a skillet over medium-high heat with oil. Fry chimichangas seam-side down until golden brown, about 2-3 minutes per side.
  7. Let Them Rest: Drain on paper towels to remove excess oil.
