  • 2 cups cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled

  • 4 cups beef broth

  • Salt and pepper to taste

Instructions

  1. Cook the bacon: In a large pot or Dutch oven, cook the bacon over medium heat until it’s crispy. This will take about 6-8 minutes. Once done, remove it, crumble it, and set it aside.
  2. Add the ground beef: In the same pot with the leftover bacon grease, add your ground beef. Break it up with a spoon, and cook until browned (about 5-7 minutes). Drain excess fat if necessary.
  3. Toss in the onions and garlic: Sauté until they’re soft and fragrant—about 3-4 minutes.
  4. Add the potatoes: Toss in the diced potatoes along with the beef broth. Bring everything to a boil, then reduce the heat to low and let it simmer uncovered for about 15-20 minutes until the potatoes are tender.
  5. Stir in the milk: Once the potatoes are tender, add the milk for creaminess.
  6. Gradually add the cheese: Stir in the shredded cheddar cheese until it melts.
  7. Season it up: Taste and add salt and pepper to your liking.
  8. Finish with toppings: Ladle soup into bowls, topping with crumbled bacon and chives.
