  • ½ cup mini chocolate chips (for garnish)

Instructions

  1. Preheat your oven to 350°F (170°C) and line a muffin tin with paper liners.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. Combine the wet ingredients: In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Combine the mixtures: Gradually add the dry mixture to the wet mixture until just combined.
  5. Fold in the chocolate chips gently.
  6. Fill the muffin cups about ¾ full with batter.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes in the tin before transferring to a wire rack.
  9. Prepare the frosting: Beat softened butter, then gradually add powdered sugar, vanilla extract, and ground cinnamon until smooth. Add heavy cream as needed.
  10. Frost each cupcake generously, topping with mini chocolate chips.
