  • 1 lime (zest divided)
  • 2 tsp coconut extract
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the all-purpose flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  4. Add the eggs, key lime juice, lime zest, and coconut extract, mixing until fully combined.
  5. Combine the flour mixture into the wet ingredients gradually.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Scoop out tablespoon-sized portions and roll them into balls.
  8. Coat each ball in powdered sugar until fully covered.
