Description

Delicious oatmeal cream pie cookies with a gooey marshmallow filling that bring back childhood memories.

  • 3 cups old-fashioned rolled oats
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven: Start by preheating your oven to 350°F (175°C).
  2. Cream the butter and sugars: In a large mixing bowl, beat together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla: Mix in the eggs one at a time, followed by the vanilla extract.
  4. Combine dry ingredients: In another bowl, whisk together flour, baking soda, salt, ground cinnamon, and rolled oats.
  5. Combine wet and dry: Gradually add dry mixture into the wet mixture and mix until just combined.
  6. Scoop the cookie dough: Drop rounded tablespoons of dough onto lined baking sheets, spacing them about 2 inches apart.
  7. Bake: Place the cookie sheets in the oven and bake for 10-12 minutes until golden brown.
  8. Cool: Let the cookies cool on the sheets for about 5 minutes before transferring them to a cooling rack.
  9. Prepare the filling: Whip together marshmallow fluff and powdered sugar until well combined.
  10. Assemble the cookies: Spread a dollop of fluff on the bottom of half the cookies and top with the remaining cookies to form a sandwich.
