A comforting Cheesy Ground Beef and Rice Casserole that is rich in flavor and packed with nostalgia.

- 1 lb lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1/2 cup milk or beef broth
- 2 cups shredded cheddar cheese (divided)
- 1 tsp paprika
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the ground beef in a large skillet over medium heat until fully cooked, about 7-8 minutes. Drain any excess fat.
- Sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.
- Combine the cooked ground beef, sautéed onions, garlic, cooked rice, cream of mushroom soup, and milk or broth in a large mixing bowl.
- Add 1 ½ cups of shredded cheddar cheese into the mixture and fold to combine.
- Transfer the mixture into a greased 9×13-inch baking dish and spread it evenly. Top with the remaining ½ cup of cheddar cheese.
- Bake for 20-25 minutes or until bubbly and golden on top.
- Garnish with chopped parsley and let sit for 5-10 minutes before serving.
