Delightful and crunchy California Fig and Pistachio Crisps, perfect for snacking or festive gatherings.


Ingredients

  • 1 ½ cups coarsely chopped California Dried Figs
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour (2 tablespoons removed to coat figs)
  • 2 teaspoons baking soda
  • 1 ¼ teaspoons kosher salt
  • ⅓ cup brown sugar
  • 1 cup nonfat Greek yogurt
  • 1 cup low-fat milk
  • ¼ cup honey
  • 1 cup golden raisins
  • 1 ½ cups shelled pistachios
  • ½ cup sunflower seeds
  • ¼ cup chia seeds
  • ¼ cup sesame seeds
  • ¼ cup flax seed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toss the chopped California figs with 2 tablespoons of all-purpose flour.
  3. Combine the whole wheat flour, remaining all-purpose flour, baking soda, kosher salt, and brown sugar in a large bowl.
  4. Whisk together the Greek yogurt, low-fat milk, honey, and golden raisins in another bowl.
  5. Pour the wet mixture into the dry ingredients, mixing gently.
  6. Fold in the chopped pistachios, sunflower seeds, chia seeds, sesame seeds, and flax seeds.
  7. Scoop tablespoons of the mixture onto a lined baking sheet, spacing them 2 inches apart.
  8. Bake for about 20-25 minutes until golden brown and crisp on the edges.
  9. Cool on a baking rack for a few minutes before enjoying.
