Ingredients

- 1 lemon (zest from whole, juice from half)
- 2 cups almond milk, unsweetened (or other plant-based milk)
- 2 cups blueberries, fresh or frozen
- 1/2 cup avocado chunks, fresh or frozen
- 1/2 cup plain Greek yogurt
- 1 tsp vanilla extract
- 2 Tbsp chia seeds
- 1/4 tsp cinnamon
- Ice, until desired temperature is reached
Instructions
- Prep your ingredients by gathering everything you need.
- Zest your lemon and juice it, removing any seeds.
- Blend together the almond milk, blueberries, avocado, yogurt, vanilla extract, chia seeds, cinnamon, and lemon juice and zest.
- Add ice and blend until smooth.
- Taste and adjust sweetness if needed.
- Serve in a chilled glass and enjoy.
Notes
Serve in a tall glass or as a smoothie bowl topped with fruits and nuts. Can be made ahead of time.
