Ingredients

  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Vegetable Oil or Melted Butter
  • 2 large Eggs
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1 cup Chopped Pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the granulated sugar and brown sugar in a large mixing bowl. Add vegetable oil (or melted butter) and whisk until combined.
  3. Add the eggs into the bowl and whisk thoroughly to create a smooth batter.
  4. Combine the all-purpose flour, baking powder, and salt in another bowl. Gradually add to wet ingredients and stir gently until just combined.
  5. Add the vanilla extract and chopped pecans, stirring to distribute evenly.
  6. Prepare a greased loaf pan (9 x 5 inches) or line with parchment paper. Pour the batter into the pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
