Ingredients

  • Fresh Apricots (about 2 cups)
  • All-Purpose Flour (2 cups)
  • Granulated Sugar (1 cup)
  • Unsalted Butter (1/2 cup or 1 stick)
  • Baking Powder (2 teaspoons)
  • Salt (1/2 teaspoon)
  • Eggs (2 large)
  • Milk (1/2 cup)
  • Vanilla Extract (1 teaspoon)
  • Optional Topping: Cinnamon Sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×9-inch baking dish or an 8×8-inch square pan with butter or cooking spray.
  3. Wash the apricots and slice them in half to remove the pits.
  4. Cream together the softened butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Whisk together the flour, baking powder, and salt in a separate bowl.
  7. Combine the dry mixture with the wet ingredients, alternating with the milk.
  8. Fold in half of the apricot pieces into the batter.
  9. Pour the batter into the prepared baking dish and level it out.
  10. Sprinkle cinnamon sugar over the top if desired.
  11. Bake for about 35–40 minutes, or until a toothpick comes out clean.
  12. Cool the buckle for about 10 minutes, then serve warm.
