Ingredients

  • 2 cups yellow squash, sliced
  • 2 cups zucchini, sliced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup breadcrumbs
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 1 egg
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your yellow squash and zucchini by slicing them into thin rounds.
  3. Sauté the onions and garlic in olive oil until translucent, then add the garlic.
  4. Combine the sliced squash and zucchini, sautéed onion and garlic, cheese, breadcrumbs, milk, egg, salt, and pepper in a large mixing bowl.
  5. Grease your baking dish with olive oil.
  6. Layer the veggie mix in the dish and top with remaining cheese and breadcrumbs.
  7. Bake for 30-35 minutes until golden brown and bubbly.
  8. Cool for about 10 minutes before serving.
