- 1 Pie Crust
- 4 Beefsteak Tomatoes (peeled and sliced thin)
- Salt and Pepper (to taste)
- 1 tbsp Fresh Basil (or 1 tsp dried basil)
- 2 tbsp Chopped Chives
- 1 cup Heavy Mayonnaise (preferably Duke’s)
- 1 cup Grated Cheddar Cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the pie crust according to package instructions or roll it out and fit it into a 9-inch pie plate.
- Layer the thinly sliced, peeled tomatoes in a single layer over the crust, then sprinkle with salt and pepper.
- Mix the mayonnaise, herbs, and half the cheese in a bowl until creamy.
- Spread the mayo mixture over the tomatoes.
- Top with the remaining grated cheddar cheese.
- Bake for about 30-35 minutes until bubbling and golden brown.
- Cool for 10 minutes before slicing and serving.
