Description

Ingredients

  • 1 Pie Crust
  • 4 Beefsteak Tomatoes (peeled and sliced thin)
  • Salt and Pepper (to taste)
  • 1 tbsp Fresh Basil (or 1 tsp dried basil)
  • 2 tbsp Chopped Chives
  • 1 cup Heavy Mayonnaise (preferably Duke’s)
  • 1 cup Grated Cheddar Cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crust according to package instructions or roll it out and fit it into a 9-inch pie plate.
  3. Layer the thinly sliced, peeled tomatoes in a single layer over the crust, then sprinkle with salt and pepper.
  4. Mix the mayonnaise, herbs, and half the cheese in a bowl until creamy.
  5. Spread the mayo mixture over the tomatoes.
  6. Top with the remaining grated cheddar cheese.
  7. Bake for about 30-35 minutes until bubbling and golden brown.
  8. Cool for 10 minutes before slicing and serving.
