  • 2 cups garden tomatoes, sliced
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup fresh basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon optional hot sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crust in a 9-inch pie dish.
  3. Layer half of the sliced tomatoes in the crust, seasoning with salt and pepper.
  4. Sprinkle half of the shredded cheddar cheese over the tomatoes.
  5. Mix mayonnaise, chopped basil, and hot sauce in a bowl, then spread this mixture over the cheese layer.
  6. Repeat the layering with the remaining tomato slices and top with the remaining cheese.
  7. Bake for about 30-35 minutes, until golden brown and bubbly.
  8. Let it rest for 10 minutes before slicing.

Notes

For a crispy bottom, prick the crust with a fork and consider blind baking for a few minutes before adding the filling.
