- 2 cups garden tomatoes, sliced
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup mayonnaise
- 1/4 cup fresh basil, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon optional hot sauce
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the pie crust in a 9-inch pie dish.
- Layer half of the sliced tomatoes in the crust, seasoning with salt and pepper.
- Sprinkle half of the shredded cheddar cheese over the tomatoes.
- Mix mayonnaise, chopped basil, and hot sauce in a bowl, then spread this mixture over the cheese layer.
- Repeat the layering with the remaining tomato slices and top with the remaining cheese.
- Bake for about 30-35 minutes, until golden brown and bubbly.
- Let it rest for 10 minutes before slicing.
Notes
For a crispy bottom, prick the crust with a fork and consider blind baking for a few minutes before adding the filling.
