  • 3 ½ to 4 cups white sugar (840960 ml)
  • Juice of 1 medium lemon (about 2 tablespoons or 30 ml)
  • 56 pint-sized jars with lids

Instructions

  1. Prep the peaches by washing, peeling, and dicing them into bite-sized pieces.
  2. Mix the diced peaches with sugar in a large bowl and let sit for about an hour.
  3. Juice the mixture by transferring to a pot and adding lemon juice, stirring well.
  4. Cook over medium heat, stirring occasionally until it thickens (20 to 40 minutes).
  5. Fill the sterilized jars with hot preserves, leaving space at the top.
  6. Seal the jars while hot or process in a boiling water bath for 10 minutes for long-term storage.
