Ingredients

  • 1/2 cup unsalted butter, chilled and cubed
  • 3/4 cup buttermilk
  • 1 cup fresh peaches, diced
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk the dry ingredients together in a large mixing bowl.
  3. Add the chilled, cubed unsalted butter to the flour mixture and mix until coarse crumbs form.
  4. Pour in the buttermilk and vanilla, gently mixing until just combined.
  5. Fold in the diced peaches, being careful not to crush them.
  6. Shape the dough into a disk about 1-inch thick, and slice into wedges.
  7. Transfer the wedges to a lined baking sheet, brushing tops with buttermilk.
  8. Bake for 15-20 minutes or until golden brown.
