Instructions

  1. Prep Your Peaches: Start by washing and dicing your fresh peaches into about 1/2-inch chunks.
  2. Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  3. Combine the Wet Ingredients: In another bowl, beat the eggs and then add the buttermilk.
  4. Bring It All Together: Carefully fold the wet ingredients into the dry mixture.
  5. Add the Peaches: Gently fold in the diced peaches until just combined.
  6. Heat the Oil: In a deep pan, heat oil to about 350°F (175°C).
