Description

Decadent Mint Chocolate Chip Truffles that combine creamy goodness with a refreshing mint zing.


Ingredients

  • 4 ounces Cream Cheese (Softened)
  • 1/2 cup Unsalted Butter (Softened)
  • 2 cups Powdered Sugar
  • 1 teaspoon Peppermint Extract
  • 1 drop Green Food Coloring Gel
  • 1/2 cup Mini Semisweet Chocolate Chips
  • 12 ounces Ghirardelli Melting Chocolate (Melted)

Instructions

  1. Soften the cream cheese and butter by allowing them to sit at room temperature for 30 minutes.
  2. Mix the cream cheese and unsalted butter in a large bowl until light and fluffy.
  3. Add the powdered sugar gradually, then beat in the peppermint extract and food coloring.
  4. Fold in the mini chocolate chips gently with a spatula.
  5. Chill the mixture in the fridge for about 30 minutes.
  6. Roll the mixture into balls, about a tablespoon each.
  7. Melt the Ghirardelli melting chocolate until smooth.
  8. Coat each ball in melted chocolate and place on a parchment-lined baking sheet.
  9. Chill the coated truffles in the fridge until set, about 30 minutes.
