Ingredients

- 4 ounces Cream Cheese (Softened)
- 1/2 cup Unsalted Butter (Softened)
- 2 cups Powdered Sugar
- 1 teaspoon Peppermint Extract
- 1 drop Green Food Coloring Gel
- 1/2 cup Mini Semisweet Chocolate Chips
- 12 ounces Ghirardelli Melting Chocolate (Melted)
Instructions
- Soften the cream cheese and butter by allowing them to sit at room temperature for 30 minutes.
- Mix the cream cheese and unsalted butter in a large bowl until light and fluffy.
- Add the powdered sugar gradually, then beat in the peppermint extract and food coloring.
- Fold in the mini chocolate chips gently with a spatula.
- Chill the mixture in the fridge for about 30 minutes.
- Roll the mixture into balls, about a tablespoon each.
- Melt the Ghirardelli melting chocolate until smooth.
- Coat each ball in melted chocolate and place on a parchment-lined baking sheet.
- Chill the coated truffles in the fridge until set, about 30 minutes.
