A warm and cozy Crustless Coconut Pie that’s easy to make and evokes sweet memories.


Ingredients

  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs (room temperature)
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/4 cup butter, melted and cooled
  • Optional toppings: whipped cream or extra toasted coconut flakes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prep a 9-inch pie dish by greasing it.
  3. Mix dry ingredients in a bowl: shredded coconut, sugar, flour, baking powder, and salt.
  4. Prepare wet ingredients in another bowl by beating the eggs and mixing in milk, vanilla, and melted butter.
  5. Combine the dry mixture with the wet mixture until just mixed.
  6. Pour the mixture into the prepared pie dish.
  7. Bake for 45-50 minutes until golden brown.
  8. Let cool for at least 15 minutes before serving.

Notes

For a twist, try adding crushed pineapple or chocolate chips.
