Ingredients

- 1 cup shredded coconut (sweetened or unsweetened)
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs (room temperature)
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/4 cup butter, melted and cooled
- Optional toppings: whipped cream or extra toasted coconut flakes
Instructions
- Preheat the oven to 350°F (175°C).
- Prep a 9-inch pie dish by greasing it.
- Mix dry ingredients in a bowl: shredded coconut, sugar, flour, baking powder, and salt.
- Prepare wet ingredients in another bowl by beating the eggs and mixing in milk, vanilla, and melted butter.
- Combine the dry mixture with the wet mixture until just mixed.
- Pour the mixture into the prepared pie dish.
- Bake for 45-50 minutes until golden brown.
- Let cool for at least 15 minutes before serving.
Notes
For a twist, try adding crushed pineapple or chocolate chips.
