  • 23 Yellow Squash, sliced into ¼ inch thick half-moons
  • 2 tablespoons Olive Oil
  • 23 cloves Garlic, minced
  • ½ cup Parmesan Cheese, freshly grated

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grab the yellow squash, wash them, and slice into half-moons.
  3. Drizzle olive oil over the sliced squash in a large bowl.
  4. Add minced garlic, salt, and pepper; toss to coat.
  5. Take freshly grated Parmesan and add to the bowl, reserving some for topping.
  6. Line a baking sheet with parchment paper and spread the squash mixture in a single layer.
  7. Roast for 20-25 minutes, flipping halfway through.
  8. Serve and enjoy with extra Parmesan on top if desired.
