Ingredients

  • 8 ounces pasta (such as rotini or penne)
  • 1 cup Greek yogurt
  • 2 tablespoons Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced cucumber
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted water until al dente, about 8-10 minutes. Drain and cool under cold water.
  2. Prepare the cherry tomatoes and cucumbers by halving and dicing them, respectively.
  3. Make the dressing by mixing Greek yogurt and Caesar dressing in a large bowl until smooth.
  4. Combine the cooled pasta with the dressing until coated.
  5. Add the cherry tomatoes, cucumbers, and Parmesan cheese, and mix gently.
  6. Serve immediately or chill in the fridge for 1-2 hours before serving.
