Ingredients

1 lb ground turkey (or chicken/veggie crumbles)

1 small onion, diced

2 garlic cloves, minced

1 can white beans, drained

1 cup pumpkin purée (not pie filling!)

1 (4 oz) can diced green chiles

1½ cups chicken or veggie broth

1 tsp ground cumin

½ tsp smoked paprika

Salt & pepper to taste

Instructions

Sauté onion + garlic in oil over medium heat (3–4 min). Add a pinch of salt.

Add turkey, breaking it up as it browns (5–6 min).

Season with cumin, smoked paprika, ½ tsp salt, and ¼ tsp pepper. Toast spices for 1 min.

Stir in pumpkin, beans, green chiles, and broth. Simmer uncovered for 20–25 min, stirring occasionally.
