Description

A tropical twist on a classic chicken salad, combining sweet pineapple, crunchy pecans, and tender chicken.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup pineapple, diced
  • 1/2 cup pecans, chopped
  • 1/2 cup celery, chopped
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard

Instructions

  1. Prepare the chicken by cooking or shredding pre-cooked chicken.
  2. Chop and dice the pineapple and celery, and roughly chop the pecans.
  3. Make the dressing by mixing mayonnaise, Dijon mustard, salt, and pepper.
  4. Toss together the chicken, pineapple, celery, and pecans with the dressing.
  5. Chill in the refrigerator for at least 30 minutes before serving.
