A tropical twist on a classic chicken salad, combining sweet pineapple, crunchy pecans, and tender chicken.

- 2 cups cooked chicken, shredded
- 1 cup pineapple, diced
- 1/2 cup pecans, chopped
- 1/2 cup celery, chopped
- 1/3 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Lettuce leaves (for serving)
Instructions
- Prepare the chicken by cooking or shredding pre-cooked chicken.
- Chop and dice the pineapple and celery, and roughly chop the pecans.
- Make the dressing by mixing mayonnaise, Dijon mustard, salt, and pepper.
- Toss together the chicken, pineapple, celery, and pecans with the dressing.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For added flavor, consider toasting the pecans. Adjust seasoning according to your preference.
